Here's a free pattern for a very easy baby poncho. Two garter-stitch panels are joined and then finished with single crochet trim.
It's shown in a deep magenta with turquoise and lime green trim, but feel free to have fun with color choices and finishes: add some fringe or decorative buttons.

PONCHO PANEL: make two:
With size 10 needles, cast on 24(30) sts. Work in garter stitch until 16”(18”) in length. Bind off, leaving a long end for sewing.
JOINING:
Lay panels at right angles to each other so that they form an “L”, having the bottom right corner of the vertical piece meeting the bottom left corner of the horizontal piece. Sew the seam. Turn the “L” so that it is now “V”. Fold the left side of your “V” down so that the left side corner meets the bottom point of the “V”. Turn the right side of the “V” down so that the right corner meets the edge of the rectangle. Sew this seam.
FINISHING:
Work in all loose ends. With crochet hook and contrast yarn, work a single crochet around the neck and body edges.>
